Barbecue expert Joachim Linna from Outdoor Kitchen Paradise Teulada explains what is important for the perfect start to the season.

As soon as the temperatures rise in April and May, barbecue season begins on the Costa Blanca. But while the first steak is still sizzling on the grill at a fresh 15 degrees in northern Europe, it can already be summery hot here. This has an impact on barbecue behaviour - and the choice of the right barbecue. Joachim Linna from Outdoor Kitchen Paradise Teulada gives valuable tips for a successful start to the season.

Charcoal, gas or electricWhich barbecue suits whom?
The question of the best barbecue is almost a question of faith. Charcoal barbecues provide the typical smoky flavour, but require patience and the right technique. Gas barbecues offer convenience, are quickly ready for use and are easy to regulate - ideal for spontaneous barbecuers. Electric barbecues are an alternative for terraces and balconies where open flames are not permitted. An important factor on the Costa Blanca is the high risk of fire in the summer months. Although barbecues are permitted on private terraces, open fires in the open air are strictly prohibited in many municipalities from early summer. If you want to be on the safe side, use gas or electric barbecues. If you don't want to do without the aroma of wood, you can help with smoking chips or special planks.

How much meat per person?
One of the most frequently asked questions when barbecuing: How much meat do you actually need? Joachim recommends around 250-300 grams per person, depending on the side dishes. „A good ribeye steak or a juicy sausage is enough for most guests. If you're catering for larger groups, it's best to opt for mixed platters with meat, fish and vegetarian alternatives.“

The right spices - more than just salt and pepper
„Salt should only be added to the meat after grilling so that it doesn't dry out,“ advises Joachim. Instead, marinades with herbs such as rosemary, thyme and oregano, which are at home in Mediterranean cuisine, are suitable. If you want to experiment, you can use smoked paprika, cumin or homemade rubs with garlic and lemon.

Perfect barbecue enjoyment - professional tips
- Preheat the grillBring to temperature for at least 10 minutes so that the food does not stick. What helps a lot is to rub the grill grates firmly with a raw onion.
- Take the meat out of the fridge earlyRoom temperature ensures even cooking.
- Using indirect grillingLarge pieces such as pulled pork or whole fish are particularly succulent.
- Don't forget vegetables and cheeseGrilled peppers, courgettes or halloumi are perfect accompaniments.
