De delicate oranjekleurige vruchten moeten binnen een paar weken worden geoogst omdat ze extreem gevoelig zijn. Daarom helpt de hele regio een handje - vaak zelfs de burgemeester zelf om de delicate n\u00edsperos op tijd in de manden te krijgen.<br \/>De Japanse loquat (\u201eN\u00edspero\u201c) komt oorspronkelijk uit China en gedijt al bijna een eeuw in het milde klimaat van de Costa Blanca. <br \/>Rond Callosa d'en Sarri\u00e0, het belangrijkste teeltgebied in Spanje, draagt het fruit zelfs het kwaliteitslabel \u201eDOP N\u00edspero de Callosa d'en Sarri\u00e0\u201c. Dit garandeert een uitzonderlijke zoetheid en versheid, waaraan het fruit zijn reputatie te danken heeft.<br \/>N\u00edsperos hebben een zoetzure smaak en zijn perfect voor desserts, jam, verfrissende sorbets, exotische chutneys of zelfs als begeleiding bij hartige gerechten zoals kaasplateaus of gegrild vlees. Dit traditionele festival viert niet alleen de oogst, maar biedt inwoners en bezoekers ook de gelegenheid om op verschillende manieren kennis te maken met de vrucht. Lokale producenten presenteren hun producten, restauranthouders verrassen bezoekers met nieuwe creaties en bezoekers leren interessante feiten over de teelt, verwerking en speciale behandeling van de delicate vrucht.<br \/>Het is ook bekend dat hele families en buurten samen actief zijn tijdens de oogst - er is een soort stilzwijgende overeenkomst: Tijdens deze korte oogstfase nemen andere activiteiten en verplichtingen vaak een pauze. Naast professionele boeren zijn er ook bankbedienden, leraren en zelfs winkeliers te zien die het delicate fruit op de plantages plukken.<br \/>Het belang van de n\u00edspero voor de regio wordt ook weerspiegeld in talloze legenden en anekdotes. E\u00e9n populair verhaal vertelt dat de vroege boeren geloofden dat witte netten boze geesten zouden weghouden en de oogst zouden beschermen. Tegenwoordig worden de netten vooral gebruikt om het fruit te beschermen tegen overmatige zon en schade door vogels.<br \/>Ook internationale kookliefhebbers hebben N\u00edspero allang ontdekt. Er ontstaan voortdurend nieuwe culinaire idee\u00ebn in de regio, van zelfgemaakte likeuren tot innovatieve dessertvariaties.
